Tortellini Soup

Easy to prepare. Hearty to eat.
1 Tbsp vegetable oil
2 Onions, chopped
2 Garlic cloves, chopped
2 Stalks of celery, diced
3 Carrots, sliced thinly
4 Ontario greenhouse tomatoes, chopped
4 Cups chicken broth
1 Pkg meat filled tortellini
2 Tsp Italian seasoning
Salt and pepper to taste
In a large pot over medium high heat, heat the oil, and add onion, garlic, celery and carrots. Cook for 5 minutes. Add seasonings and stir until mixed. Add tomatoes, chicken broth and tortellini. Bring to a boil, reduce heat and simmer until tortellini has cooked – approximately 12-15 minutes. Re-season if needed with salt and pepper.
