Red Pepper Soup

Very unusual. Very easy. Very, very refreshing! 

1    Tbsp olive oil
2    Garlic cloves, minced
4    Ontario greenhouse red peppers, cut into chunks
4    Ontario greenhouse tomatoes, seeded and sliced
2    Leeks, sliced (use white part only)
2    Tbsp fresh basil, chopped
1    Cup milk
1    Cup cream
    Pinch of sugar
    Salt and pepper to taste
    
In a soup pot, brown garlic, red peppers, tomatoes and leeks in the oil. Add basil, salt and pepper. Continue cooking on medium low heat for 15 minutes. Add milk and stir until mixed well.

Place in a blender or food processor and puree until smooth.

Return to the pot, and add cream and sugar. Mix well.

Best served cold.
