Crab Bisque

So easy. So elegant. So tasty. 

1         Tbsp butter
1/3      Cup celery, chopped
1         Onion, chopped
2         Carrots, sliced
2         Ontario greenhouse tomatoes, cut into chunks
¼         Cup parsley, chopped
½         Cup dry white wine
2-1/2    Cups chicken broth
8          Oz. crab meat
2         Cups cream
           Salt and pepper to taste
   
Add the butter to a skillet, and sauté celery, onion, carrots and tomatoes for approximately 4 minutes. Sprinkle in the parsley and season with salt and pepper. Pour white wine over top, bring to a boil and simmer until liquid has evaporated. Add the chicken broth and simmer for 15 minutes. Add crab meat and cream, and warm through.

Place in a blender or food processor and puree until smooth.
