Stuffed Zucchini

A new recipe for the over-abundant zucchini from the garden!
2-3 Zucchini
2 Cups Swiss cheese, sliced into strips
½ Cup Ontario greenhouse tomatoes, diced
½ Cup Ontario greenhouse peppers, diced
1 Clove garlic, minced
Slice the zucchini lengthwise and scoop out a hollow down the centre (cut side).
In a bowl, mix together the tomatoes, peppers, and garlic. Season with salt and pepper. Stuff the hollows of the zucchini with the vegetable mixture. Place cheese strips on top of vegetable stuffing.
Bake for 10-15 minutes at 400 F.
